My opponent plays Bewitching Spirit to make me discard. I react with Discipline, drawing a card when Discipline was my last card in hand.

Yes. Bewitching Spirit's controller only chooses an opponent; the opponent discards on resolution of the trigger. You will discard the card you drew from Discipline.
