Vayne, Hunter declares an assault and I want to use Gust on her before attack triggers finish. Can Gust remove Vayne in time to stop her assault trigger from happening?

No. Once the relevant assault trigger condition is met and the trigger is created, removing Vayne afterward with Gust does not undo that already-created trigger.
