Can Not So Fast stop Volibear if Volibear's effect is not a deflectable ability?

I want to use Not So Fast against Volibear, Furious. If Volibear's relevant text is not the kind of ability Not So Fast can deflect or interrupt, does Not So Fast fail to apply?

Correct. Not So Fast only works on legal ability targets matching its text. If Volibear's effect does not qualify, Not So Fast cannot be used on it.
